En nariz, piña, pera blanca, melocoton y lima que ceden al final a aromas de madreselva. La acidez persistente con el cuerpo medio de este vino garantiza un buen equilibrio. Marida bien con bacalao, gambas al ajillo y por supuesto los sorbetes cítricos.

VINIFICATION

The grapes were harvested and fermented separately.

The Chenin comes from old trellised vines situated on Diemersfontein, Viognier comes from various vineyards on the farm and a small touch of Chardonnay. A slow alcoholic fermentation in stainless steel tanks at 14-16 °C after which the wine was left on it’s lees for 6 months. 10% of the total Chenin component was fermented in second fill French oak barrels. The components were blended 6 weeks prior to bottling.

Winemaker’s comments

On the nose pineapple, white pear, peaches and lime notes giving way to subtle floral honeysuckle scents contributing to complexity. The lingering acidity together with the medium weight mouth feel from extended time on the lees ensures the lasting balance of the wine. Together with a meal of Kingklip and passion fruit sauce or prawn spring rolls and a trio of citrus sauces ensures that this wine is enjoyed to new heights.
